Ingredients

  • 1 large tortilla wrap
  • 2 eggs, beaten
  • 1/4 cup black beans, drained and rinsed
  • 1/4 avocado, sliced
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup salsa
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Directions

1 Heat olive oil in a non-stick pan over medium heat.

2 Add the beaten eggs and cook until scrambled, stirring occasionally. Season with salt and pepper, to taste.

3 Warm up the tortilla wrap in a pan or microwave.

4 Spread black beans on top of the tortilla.

5 Add the scrambled eggs, avocado slices, shredded cheddar cheese, and salsa on top of the black beans.

6 Roll the wrap tightly and enjoy!
