Vegan Banana Bread

Ingredients:

  • 3 ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup maple syrup or agave nectar
  • 1/4 cup plant-based milk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 3/4 cups all-purpose flour

Instructions:

  1. Preheat oven to 350¡F (175¡C). Grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, combine mashed bananas, melted coconut oil, maple syrup or agave nectar, plant-based milk, baking soda, vanilla extract, and salt. Whisk until well combined.
  3. Add in the flour, and mix until just combined. Do not overmix.
  4. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  5. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes before removing and transferring to a wire rack to cool completely.
  6. Slice and serve!
