Ingredients

  • 1 sweet potato, peeled and diced
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped

Directions

1 Heat olive oil in a large non-stick skillet over medium heat.

3 Add the chopped red bell pepper, zucchini, and minced garlic to the skillet and continue to sautŽ for another 5-7 minutes until the vegetables are tender.

4 Add smoked paprika, cumin, salt, and black pepper to the skillet and stir to evenly coat the vegetables.

5 Cook for another 2-3 minutes until the vegetables are lightly browned and crispy.
