Ingredients:

  • 1 head of romaine lettuce, chopped
  • 1/2 cup croutons
  • 1/4 cup cashews, soaked in water for 2 hours or overnight
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 garlic clove
  • 1/4 cup olive oil
  • 2 tablespoons nutritional yeast
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the chopped romaine lettuce and croutons.
  2. In a blender or food processor, combine the soaked cashews, lemon juice, Dijon mustard, garlic clove, olive oil, nutritional yeast, and a pinch of salt and pepper. Blend until smooth and creamy.
