Ingredients

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 2 eggs
  • 1 tsp white vinegar
  • Salt and pepper, to taste
  • Red pepper flakes (optional)

Directions

1 Toast the bread slices to your desired level of doneness.
2 While the bread is toasting, slice the avocado in half and remove the pit. Scoop out the avocado flesh into a small bowl and mash with a fork until it reaches your desired consistency. Season with salt and pepper.

3 In a small saucepan, bring about 2 inches of water and 1 teaspoon of white vinegar to a gentle simmer.

4 Crack one egg into a small dish or ramekin. Use a spoon to create a gentle whirlpool in the simmering water, then carefully pour the egg into the center of the whirlpool. Poach for about 3 minutes for a runny yolk, or longer if desired. Remove the egg from the water with a slotted spoon and place on a paper towel to drain any excess water. Repeat with the second egg.

5 Spread the mashed avocado on the toast slices. Top each slice with a poached egg. Sprinkle with red pepper flakes, if using.

6 Serve immediately and enjoy!
