Ingredients

  • 2 slices of whole grain bread
  • 1/4 cup hummus
  • 1/2 avocado, sliced
  • 2-3 slices of tomato
  • 2-3 slices of cucumber
  • A handful of baby spinach
  • Salt and pepper, to taste

Directions

1 Toast the bread slices to your desired level of doneness.

2 Spread hummus on one side of each slice of bread.

3 Top one slice of bread with sliced avocado, tomato, cucumber, and baby spinach. Season with salt and pepper, to taste.

4 Place the other slice of bread on top of the vegetables to make a sandwich.

5 Cut the sandwich in half and serve.
