Ingredients

  • 1 vegan bagel, sliced in half
  • 1/4 block of firm tofu, crumbled
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 avocado, sliced
  • 1/4 cup cherry tomatoes, halved
  • 1 tablespoon vegan cream cheese
  • 1 teaspoon olive oil
  • Salt and pepper, to taste

Directions

1 In a small bowl, mix together crumbled tofu, turmeric, garlic powder, and onion powder.

2 Heat olive oil in a non-stick pan over medium heat. Add the tofu mixture and cook until lightly browned, stirring occasionally.

3 Toast the bagel halves until lightly crispy.

4 Spread vegan cream cheese on the bottom half of the bagel.

5 Add cooked tofu, sliced avocado, and cherry tomatoes on top of the cream cheese.

6 Season with salt and pepper, to taste.

7 Place the top half of the bagel on top to make a sandwich.
