Ingredients
- 6 large onions, sliced
- 3 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 6 cups beef or vegetable broth
- 1 cup red wine
- 2 sprigs fresh thyme
- 1 bay leaf
- Salt and pepper, to taste
- 1 baguette, sliced
- 1 cup grated Gruyere cheese
Directions
1 In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until the onions are caramelized, about 30-40 minutes.
2 Add the flour to the pot and stir to coat the onions. Cook for 1-2 minutes, stirring constantly.
3 Add the beef or vegetable broth, red wine, thyme sprigs, bay leaf, and salt and pepper to taste. Bring to a boil, then reduce the heat and let the soup simmer for 45 minutes to 1 hour.
4 While the soup is simmering, preheat the broiler and toast the baguette slices.
5 When the soup is done, remove the thyme sprigs and bay leaf. Ladle the soup into oven-safe bowls, top each bowl with a slice of toasted baguette, and sprinkle grated Gruyere cheese over the top.
6 Place the bowls on a baking sheet and broil until the cheese is melted and bubbly, about 2-3 minutes.
7 Serve hot and enjoy!
