Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 cup dried green or brown lentils, rinsed and drained
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Chopped fresh parsley or cilantro, for garnish

Directions

1 In a large pot or Dutch oven, heat the olive oil over medium heat.
2 Add the onion and garlic and sautŽ for 2-3 minutes until softened.

3 Add the carrots and celery and continue to sautŽ for 2-3 minutes until slightly softened.

4 Add the lentils, vegetable broth, diced tomatoes, cumin, coriander, smoked paprika, salt, and pepper to the pot and stir to combine.

5 Bring the soup to a boil, then reduce the heat to low and simmer for 25-30 minutes until the lentils are tender.

6 Use an immersion blender to puree some of the soup to a smoother consistency, or transfer some of the soup to a blender and puree in batches.

7 Serve hot, garnished with chopped fresh parsley or cilantro.
