Ingredients:

  • 8 oz. fusilli pasta
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup artichoke hearts, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp. fresh parsley, chopped
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp. dried oregano
  • Salt and pepper, to taste

Instructions:

  1. Cook the fusilli pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine the cooked pasta, kalamata olives, cherry tomatoes, artichoke hearts, feta cheese, red onion, and parsley.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine. Serve chilled.
