Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 jalape–o pepper, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 tablespoons chopped fresh cilantro
  • 1 avocado, diced
  • 1 lime, cut into wedges
  • 2 cups tortilla chips, crushed

Directions:

1 In a large pot, heat the olive oil over medium heat. Add the onion, garlic, jalape–o pepper, and red bell pepper. SautŽ for 5-7 minutes, until the vegetables are tender.

2 Add the diced tomatoes, vegetable broth, cumin, chili powder, oregano, salt, and black pepper. Bring to a boil, then reduce the heat and let simmer for 10-15 minutes.

3 Add the black beans, frozen corn, and chopped cilantro to the pot. Let simmer for another 5 minutes, until the corn is heated through.

4 Ladle the soup into bowls and top with diced avocado, crushed tortilla chips, and additional cilantro. Serve with lime wedges on the side.
