Ingredients

  • 2 slices of whole grain bread
  • 1/2 block of firm tofu, pressed and sliced
  • 1/2 cup sliced mushrooms
  • 1/4 onion, sliced
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper, to taste

Directions

1 Heat olive oil in a non-stick skillet over medium heat.

2 Add sliced mushrooms and onion to the skillet and sautĀŽ for 2-3 minutes until tender.

3 Add sliced tofu to the skillet and cook for 3-4 minutes on each side until lightly browned.

4 Sprinkle garlic powder, smoked paprika, salt, and black pepper over the tofu and mushroom mixture and stir to coat evenly.
