Ingredients:
- 1 cup red lentils, rinsed and drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 4 cups vegetable broth
- 1 can diced tomatoes, undrained
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
- Salt and pepper, to taste
Directions:
1 In a large pot or Dutch oven, sautĀ the onion and garlic over medium heat until softened, about 5 minutes.
2 Add the cumin and turmeric and cook for 1-2 minutes until fragrant.
3 Add the red lentils, vegetable broth, and diced tomatoes to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the lentils are tender and the soup has thickened.
4 Remove the pot from the heat and stir in the cilantro and lime juice.
5 Use an immersion blender or transfer the soup to a blender and puree until smooth.
6 Season the soup with salt and pepper to taste.
