Ingredients
- 1 cup brown rice
- 1 can black beans, rinsed and drained
- 1 red bell pepper, sliced
- 1/2 yellow onion, sliced
- 1 tablespoon olive oil
- 1 teaspoon cumin

- 1 avocado, sliced

Directions
1 Cook brown rice according to package instructions.
2 In a non-stick skillet, saut the sliced bell pepper and onion with a pinch of salt and black pepper for 5-7 minutes until tender.
3 Add black beans, cumin, smoked paprika, salt, and black pepper to the skillet and cook for another 3-4 minutes until heated through.
4 To assemble the breakfast bowl, divide the cooked brown rice between two bowls.

6 Add sliced avocado and fresh cilantro to the top of each bowl.
