Ingredients

  • 1 cup brown rice
  • 1 can black beans, rinsed and drained
  • 1 red bell pepper, sliced
  • 1/2 yellow onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1 avocado, sliced
  • 2 tablespoons chopped fresh cilantro

Directions

1 Cook brown rice according to package instructions.

2 In a non-stick skillet, sautŽ the sliced bell pepper and onion with a pinch of salt and black pepper for 5-7 minutes until tender.

3 Add black beans, cumin, smoked paprika, salt, and black pepper to the skillet and cook for another 3-4 minutes until heated through.

4 To assemble the breakfast bowl, divide the cooked brown rice between two bowls.

5 Top each bowl with the black bean and veggie mixture.

6 Add sliced avocado and fresh cilantro to the top of each bowl.
