Ingredients

  • 1/2 block of firm tofu, pressed and crumbled
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach
  • 1/4 onion, chopped
  • 1 clove garlic, minced
  • 1 tablespoon nutritional yeast
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cumin
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil

Directions

1 Heat olive oil in a non-stick skillet over medium heat.

2 Add chopped onions to the skillet and sautŽ for 2-3 minutes until they start to soften.

3 Add sliced mushrooms to the skillet and sautŽ for 2-3 minutes until they start to release their moisture.

6 Cook for 3-4 minutes until the tofu is lightly browned and cooked through.

7 Add fresh spinach to the skillet and sautŽ for 1-2 minutes until it wilts.
