Vegan Breakfast Quesadilla

Ingredients

  • 2 small whole wheat tortillas
  • 1/4 block of firm tofu, crumbled
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 avocado, sliced
  • 1/4 cup black beans, drained and rinsed
  • 2 tablespoons salsa
  • 2 tablespoons vegan cheese, shredded
  • Salt and pepper, to taste

Directions

1 In a small bowl, mix together crumbled tofu, turmeric, garlic powder, and onion powder.

2 Heat a non-stick pan over medium heat. Add the tofu mixture and cook until lightly browned, stirring occasionally.

3 Lay one tortilla flat in the same pan used for cooking the tofu.

4 Add the cooked tofu, avocado slices, black beans, salsa, vegan cheese, salt, and pepper on top of the tortilla.

5 Cover with the second tortilla.

6 Cook on medium heat for 2-3 minutes on each side, or until the tortilla is crispy and the cheese is melted.

7 Cut the quesadilla into wedges and serve hot.
