Ingredients:

  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup corn kernels
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup chopped red onion
  • 1/2 cup sliced cucumber
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 1/4 cup toasted pumpkin seeds
  • 1 batch of Vegan Ranch Dressing (see below)

Vegan Ranch Dressing:

  • 1/2 cup vegan mayonnaise
  • 1/4 cup non-dairy milk
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions:

  1. In a large bowl, combine the mixed greens, cherry tomatoes, avocado, corn kernels, black beans, red onion, sliced cucumber, cilantro, parsley, chives, and pumpkin seeds.
  2. In a separate bowl, whisk together the vegan mayonnaise, non-dairy milk, apple cider vinegar, fresh dill, fresh chives, minced garlic, and salt and black pepper to taste to make the Vegan Ranch Dressing.
  3. Drizzle the Vegan Ranch Dressing over the salad and toss to combine.
  4. Serve the Vegan Cobb Salad immediately, garnished with extra pumpkin seeds if desired.
